
Philippa Fairweather's Delish Summer Salad
Ingredients
Cherry on the vine tomatoes, some cut into halves, some left as whole.
Fresh whole figs (one per person) ( sliced in a criss cross at the top and peeled back to show seeds and fruit inside)
Fresh in season peaches (peeled) or nectarine slices
Feta Cheese/goats cheese
Prosciutto slices (one slice per person)
A selection of baby leaf lettuces and colourful delicate leaves, lollo rosso etc/lambs lettuce etc)
Buffalo mozzarella slices or mini balls.
Parmesan shavings
You can of course add other favorites too, such as steamed Mange Tout, Fine beans or Peas.
Optional decoration:
Mint Sprig
Balsamic glaze
Chive flowers
Instructions
Arrange a small pile of the leaves in a nest shape on each plate, then simply sprinkle the crumbled feta, tomatoes and mozzarella within the frame of the nest.
Then arrange a loop of one slice of prosciutto on each ‘nest’ and place a opened up fig in the middle. sprinkle peach slices and parmesan shavings around the edge and then a good shake of extra virgin olive oil and then lemon juice, with a tiny flick of coarse sea salt over the top. Garnish with a sprig of mint. If you have balsamic glaze, you can dot this around the edge of the plate, or get creative with a few slashes across the top.
