Poor Man's Asparagus
Look in the hedgerows around the Isle of Wight this weekend and you’ll find a tasty spring delicacy. Hop shoots, also known as poor man’s asparagus, are sending out their tendrils in search of the warm spring sunlight and are ready for a forager to harvest.
Cut off the shoots to about 15 cm long, be careful not to crush them and the faster you can get into the pan the better they’ll taste!
You can cook them in a little butter and oil seasoned with salt and pepper or added to an omelet.
