Damson Gin
It’s been a cracking year for both wild and cultivated damsons. If you’ve not got a tree local to you Bridlesford farm shop usually has a bag or two. The recipe is simple and delicious!
Weights and measures:
1 lb damsons
1 lb sugar
1 litre bottle of gin (vodka and white rum are also good)
Method:
A. Prick damsons with a clean needle and put in a clean steril glass container (that can be sealed).
B. Add sugar and shake until the sugar is very pink (1-2 days)
C. Pour in the gin, swill round and store in a cool dark place. Agitate regularly until the the sugar has dissolved.
D. Strain and bottle in December.
